Gluten-Free Italian Zoodles and Turkey Sausage
As the temperatures soar outside this summer easy, fresh and healthy recipes is a necessity. This comforting "Italian Zoodles and Turkey Sausage" dish is packed with flavor and can be a side dish or a whole meal!
"Italian Zoodles and Turkey Sausage"

• 8 oz ground turkey
• 2 zucchinis, zoodles
• 1/2 red onion, finely chopped
• 8 oz gluten-free spaghetti noodles (sub extra zoodles for carb-free)
• 1/2 c. parmesan cheese
• 1 c. ricotta cheese
• 2 cloves garlic, finely chopped
• 1/2 tsp chili powder
• 1/2 cayenne pepper (optional)
• 1 tblsp butter
• 4 oz. fresh basil
• 4 oz. fresh parsley
Shave zucchinis into zoodles using a spiralizer. Sprinkle with salt and pepper and set aside. Finely chop basil and parsley. Set aside. In a pot large enough to cook spaghetti noodles, bring water to a boil. Be sure to salt the water prior to adding noodles to the water. While noodles are cooking brown turkey in a skillet, drain and set aside. In a larger skillet melt the butter and sautee the red onion and garlic until translucent. Do not brown or burn garlic. Add zoodles, half of the chopped herbs, chili powder and cayenne pepper, browned turkey, a pinch of salt and peppers, and noodles. Cook until zoodles are soft. Place mixture in large serving dish. In separate mixing bowl combine parmesan cheese, ricotta, remaining herbs, and a pinch of salt and pepper. Spoon cheese mixture onto the center of main dish and serve!
