Gluten-Free Greek Orzo Pasta Salad

Summertime is all about quick and easy meals that take as little time next to a hot stove as possible. Pasta salads have always been a favorite of mine since childhood. What I also love about pasta salad recipes are their versatility. You can easily swap ingredients to suit your palate or your dietary necessities. This Gluten-Free Greek Orzo Pasta Salad I recently came up with is now a favorite in my own household — I hope it will be for yours as well! :)

"Gluten-Free Greek Orzo Pasta Salad"

• 8 oz gluten-free orzo pasta

• 1 zucchini

• 1 red bell pepper

• 8 oz feta cheese

• extra virgin olive oil

• salt & pepper

Wash veggies and chop into small, even bite sized pieces. Place in large mixing bowl. Cook orzo pasta in salted water to the cook time suggested on the package. Orzo cooks VERY quickly so do not walk away from it while it is cooking. Strain the pasta and allow to cool. Add the pasta to the bowl with the veggies. Sprinkle feta cheese over the pasta. Drizzle a tablespoon or so of olive oil over the ingredients and add salt and pepper to taste. Gently mix the salad so ingredients are evenly distributed. This can be served warm or cold, as a meal or side dish. To make this also dairy-free, substitute a tofu feta or vegan hard crumble cheese. Also wonderful with grilled chicken!
