Fast and Fabulous Frittata

In between my food and travel reviews I've decided to start sharing some of my own original recipes with the world. This "Fast and Fabulous Frittata" recipe is one I use at least once a week because it is so incredibly versatile. The one below features my favorite combo, but this recipe is a great way to use up extra veggies in your crisper so get creative! Breakfast, brunch, lunch, or dinner, frittatas are an easy way to throw together a deeply satisfying meal.

1 - 9" pie pan

8 - eggs

4 oz goat cheese

1/2 cup fresh baby spinach

3 strips of crispy bacon

1/2 cup cherry tomatoes

Preheat oven to 350 degrees. Spray (lightly) your pie pan with a nonstick spray. In separate bowl, whisk eggs. Fry or bake the bacon slices and place on paper towel to drain the excess grease. Once cooled, chop the bacon. Sprinkle evenly in pie pan. Slice the cherry tomatoes, just once down the center and sprinkle evenly in pie pan. Sprinkle baby spinach evenly in pie pan. Break goat cheese into small chunks and distribute evenly. Pour whisked eggs over the top of other ingredients. Leave about 1/4" to 1/8" room at top of pie pan because eggs will rise and expand while cooking. Bake for 30 to 45 minutes depending on your oven, or until a knife can be inserted and comes out (relatively) clean. Cool for 10 to 15 minutes before serving. Serves 4 to 6 people.
